Olive Oil Cake
There are savory people, and there are sweets people.
I’m savory through and through. However this Olive Oil Cake will be loved by both. It’s light and dense, citrus and a little spice, a little sweet and a little tart.
Ingredients:
1 cup olive oil
2 cups flour
1 tsp salt
1/4 tsp baking soda (2 pinches works)
3 eggs
zest and juice of 1 orange
zest and juice of 2 lemons
slices of lemon and orange for garnish
powdered sugar for garnish
Let’s Go!
Preheat oven to 375 degrees, grease & flour 9 inch round cake pan. I use a springform pan.
Mix all the ingredients together, starting with the dry and proceeding to the wet. I know the “rules” say to mix them separately and add the dry to the wet etc., but sometimes I don’t have time for that and I don’t want to do that many dishes. You can follow the “rules of baking” if you like!
Bake until a knife or skewer comes out clean - about 40ish minutes then cool on a rack.
Turn the cake upside down onto a plate, or pop the springform.
Garnish with lemons and powdered sugar & enjoy!
This cake is also great with Grapefruit - but I add a pinch of sugar or honey to mute the bitterness.
