Roasted Delicato Squash

 

I’m a Fall girl. It’s my favorite season and not just because it’s my Birthday season (I see you fellow Scorpios!), but because fall food is just elite. This is one of my favorite snacks to eat in the fall - savory, sweet, and crave worthy!

Ingredients:

  • Delicato Squash - Trader Joe’s does us a solid and sells already sliced and seeded halves

  • Olive Oil

  • Seasonings - I use my custom seasoning blend that’s loosely based on Italian blend, but even just salt, pepper & garlic powder work. Be creative!

  • Honey or Maple Syrup

  • Parmesean Cheese

Let’s Go!

  • Place the squash on a baking sheet, if you have parchment paper, even better

  • Pour Olive Oil over the top, around 2 tablespoons

  • Generously sprinkle seasoning blend over the top and then mix the squash to cover evenly

  • Bake in a 350 degree oven (you can preheat it, honestly I never do) for 10-15 minutes, stirring every few minutes so they brown evenly

  • They are done when they are golden brown and just fork tender

  • Take them out of the oven, drizzle a little honey over the top of each, and sprinkle with parmesean cheese

  • Return to the oven and bake just until the cheese melts and gets a little crispy

  • Enjoy!
