Bean Salad

Bean Salads were all the rage, and I was a full on convert.

They’re easy to meal prep, they get better as they marinate in the fridge, and they are super filling and healthy!

The other beauty of these salads are you can create your own adventure with them, and add whatever you like, or whatever is in the fridge!

Ingredients:

  • 1 can garbanzo beans

  • 1 can navy beans

  • 1 diced large cucumber

  • 1/2 diced red onion

  • 1 diced red bell pepper

  • 1/4 cup Red Wine Vinegar

  • Juice of 1/2 a lemon

  • a little less than 1/4 cup olive oil

  • 2 pinches of my seasoning blend ( I make it myself, but it’s inspired by Italian Seasoning)

Let’s Go

  • Make sure you rinse your beans to lower the sodium content!

  • Dice up the veggies and add to a bowl

  • Add the rinsed beans to the bowl

  • Add the vinegar, lemon juice, olive oil and seasoning

  • Mix!

  • Additional add or ways to serve that ins I like:

    • Mozzarella Pearls

    • Salami

    • Wax Peppers

    • Eat it as a salad or with tortilla chips

    • Add it to a pita

    • Use it on top of salmon or chicken
